vegan sweet potato cupcakes

Does it have to be a birthday to enjoy cupcakes? Here in the Welcoming Kitchen - No way! Go ahead and whip up a batch for any occasion ... even if it's only a Wednesday. If you are looking for an oat-free cupcake, substitute 1 1/2 cups gluten-free all-purpose flour plus 1/2 teaspoon xanthan gum for the oat flour. (Note: You can make your own oat flour by blending gluten-free rolled oats to a fine powder.)

Happy Birthday Cupcakes

Makes 12 cupcakes

Ingredients:
1 1/2 cups oat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup sweet potato puree
1/2 cup canola oil
1//2 cup applesauce
2 teaspoons vanilla
2 tablespoons apple cider vinegar

Preparation:
Preheat oven to 375.
In a medium bowl, combine flour, baking soda, salt and sugar. Set aside.
In a large bowl, combine sweet potato, canola oil, applesauce and vanilla.
Mix dry ingredients into wet.
Stir apple cider vinegar into batter.
Pour batter into an oiled standard muffin pan.
Bake 15 to 18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

  2. Hi Melissa,
    Try the recipe for Laura's cinnamon frosting for these. You can also change the flavor of that frosting by changing the ingredients. For example, substitute cocoa for the cinnamon. They're really yummy!

  3. I'm hopping over from Cybele Pascal's site. These cupcakes look almost perfect for my little guy! Thank you! Do you think they might work with an additional 1/2 cup of applesauce instead of the sweet potato puree? Or maybe some other apple form that's less runny? His options are pretty limited. I will be playing with this recipe for sure! :)

    I think you could increase the applesauce and it would be ok. Maybe use slightly less than you would with the sweet potato. You could also use pumpkin puree if that's ok for your little guy. Let us know how it goes, please!

  5. i just made these and the tops got crispy and brown (almost look overdone) and the middle isn't quite done. I have a fairly new oven and feel it's rather powerful...should I try baking at 350 instead?

    I'm sorry that happened. I'm not sure what went wrong, but I think you're probably right that it if you lower the temp it might work better for you. Please let me know.
