Hemp Seed Hummus - Kim's Welcoming Kitchen

The Hemp Seed Hummus from Super Seeds: The Complete Guide to Cooking with Power-Packed Chia, Quinoa, Flax, Hemp & Amaranth (Superfood Series) is one of my favorite summer recipes. It's protein-packed, so it can fuel your summer fun. It's quick to come together and not too heavy, making it ideal for summer snacking. Serve it with cut veggies or crackers, spread on a sandwich or dolloped on a green salad.

Hemp Seed Hummus (vegan, gluten-free, allergen-free)
from Super Seeds by Kim Lutz (Sterling Publishing, 2015)Makes 1 ½ cups

Hemp seeds do double duty in this recipe.First, they take the place of the traditional ingredient in hummus, tahini (some people are allergic to sesame seeds). Second, they bring crucial phytonutrients, including zinc and magnesium, to this tasty, satisfyingly textured dip.

1 ¾ cups cooked garbanzo beans (or one 15-ounce can, drained and rinsed)
2 tablespoons hemp seeds
2 tablespoons lemon juice
¼ teaspoon ground cumin
½ teaspoon salt
3 tablespoons olive oil
1 clove garlic, minced
2 tablespoons water

Blend all ingredients together in a food processor or blender until smooth.

How to Survive a Potluck with Food Allergies or a Special Diet
Fresh fruit is a safe offering for almost every guest at a potluck!

This is another post that I wrote about Growing Up With Food Allergies. With new people learning about the need for a special diet all the time, I though it would be good to bring it back.

Just when you think you have the hang of your special diet (whether it's vegan, gluten-free, due to food allergies, etc.) summer comes and throws a little wrinkle your way.

At least that's what happened to me.  I finally felt I had some mastery of what I could eat for breakfast, lunch and dinner when I changed my diet to address the needs of my nursing, food-allergic baby.  I wasn't eating the same one food over and over and over anymore.  I could make a dinner to serve guests that passed company muster.

And then came summer.

Summer means barbecues and potlucks and bringing dishes to share.  Ugh!!!

After figuring out a few tricks, I now look forward to the hot months with glee.

How to Survive a Potluck with Food Allergies or Other Special Diets

Here are some tips:
  • If I'm only bringing one dish to share, I make sure that it packs a nutrition-filled punch.  It needs to be filling and nutrient-dense so that I can be sure to join in on the fun with a grumpy belly.
  • If I'm bringing a couple of dishes, I make sure one of them is a delicious treat.  This shows the other guests that they, too, can provide a dish that's safe for others that is still going to taste great.
  • My family and I never go to a party hungry.  It's a bonus if we can eat when we get there, but if we've had something before we leave the house, we're still ok if we don't have much to choose from.
  • I separate out a few cookies or brownies from what I'm bringing and wrap them up separately for my boys.  It's easy for crumbs to mingle on a buffet table, and then all of my hard work to provide a safe treat can go down the drain.  If I have theirs set aside, I can pull them out when it's time to eat, and they will have a treat that looks like everyone else's.
  • I ask if I can serve my family first, before spoons migrate from one bowl to another.
  • Sliced fruit is always a good option to bring, too.
 Need some potluck inspiration?
Happy Cooking!

Lemon Dill Vegan Pasta Salad, Gluten-free and Food Allergy Friendly, too.

Sometimes, simple is better. That's what this pasta salad is -- simple. Crunchy asparagus and juicy tomatoes shine brightly with a lemon dill dressing.

I think it's best to make gluten-free pasta salad the day you want to eat it. If you let it sit in the refrigerator over night, the pasta can get tough. If you do have leftovers, I think it's a good idea to let it come back to room temperature and toss with a little extra dressing to replace some of the moisture that got absorbed by the pasta.

The folks at Tolerant Gluten-free Foods sent me some of their single-ingredient pasta to try. It's naturally gluten-free, vegan and allergen-friendly because it's made from either red lentils, green lentils or black beans. I used the Red Lentil Rotini in my salad. I liked the flavor, color and the clean ingredient list -- organic red lentils. That's it.

For this salad, you could use any pasta you choose.

Lemon Dill Vegan Pasta Salad, Gluten-free and Food Allergy Friendly, too.

Lemon Dill Vegan Pasta Salad (Gluten-free, Food Allergy Friendly)
Makes 6 servings

Ingredients:
  • 12 ounces dry pasta, any short, chunky shape you like
  • 8 to 10 stalks of asparagus
  • 1 cup grape tomatoes
  • 1/4 cup plus 2 tablespoons fresh-squeezed lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons minced fresh dill
  • 1 to 2 teaspoons agave nectar (optional, but will help mellow the tartness of the dressing)

Preparation:
  1. Cook pasta according to package directions.
  2. While pasta is cooking, break off tough ends of asparagus and discard.
  3. Slice asparagus into one-inch chunks.
  4. When pasta is done cooking, toss asparagus into pasta pot, then drain pasta and asparagus.
  5. Slice tomatoes in half.
  6. Whisk together lemon juice, olive oil, dill, and agave if using.
  7. Toss pasta and veggies in dressing.
  8. Add salt and pepper to taste.
  9. Serve warm or cool down a bit in the refrigerator.
FTC Disclosure: Tolerant Gluten-free Foods sent me boxes of pasta to try. All opinions are my own.

Tomatillo Pineapple Guacamole from Kim's Welcoming Kitchen

Cinco de Mayo calls for spicy salsa, cold margaritas and lots of creamy guacamole!

This guacamole adds some fruity sparkle to my favorite creamy dip. Serve it with chips or veggies, on top of salad, or on a baked potato or veggie burger.

Ingredients:

  • 1 cup coarsely chopped tomatillo

  • 3/4 cup coarsely chopped red onion

  • 1/4 teaspoon salt
  • 2 tablespoons fresh cilantro (or parsley if you don't like cilantro)
  • 1 avocado
Preparation:

  1. In a food processor, add tomatillos and jalapeño and pulse until finely chopped.
  2. Add red onion, pineapple, salt, and cilantro and pulse until combined, but still slightly chunky.
  3. Cut avocado in half lengthwise, remove pit and scoop out flesh into a medium bowl.

Vegan Chipotle Coconut Bacon

Ever since I went vegetarian and then vegan, folks have asked what I missed. You know, "Don't you miss cheese? Bacon? _____ (fill in the blank)?"

Really, honestly, the answer is no. Especially these days with so many super high-quality substitutes. When I first gave up dairy, I didn't miss cheese too much, but I'm darn glad there is Daiya, and there are some new Vegan Gourmet cheeses coming out that are really good.

Even though the whole world has been bacon obsessed for the past few years, I haven't really given it a thought.

However, coconut bacon is making it impossible not to notice this vegan food trend all over the Internet.

Vegan Chipotle Coconut Bacon

I wanted to make a version that is Welcoming Kitchen-friendly, that is to say, vegan, gluten-free, and allergen-free.

I had some left-over chipotle peppers in adobo sauce from some recipes that I'm working on for my new book.  I thought the smokiness of them would be a good fit with a faux bacon. What do you need for a bacon facsimile? Sweet, salty, and smoky. This recipe combines that smokiness with the sweetness of maple syrup and coconut and some salt.

Do they taste like bacon?

Vegan Chipotle Coconut Bacon

I couldn't really tell you, since I haven't eaten meat in a really long time, but I don't think so. I think they are crunchy, smoky, salty, sweet bites that add flavor to vegetables, salads, or straight out of your hand.

Give it a try.

Chipotle Coconut Vegan Bacon
Makes 1 cup of bacon bits

Ingredients:
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1 chipotle pepper in adobo sauce
  • 1 cup unsweetened coconut flakes
Preparation:
  1. Preheat oven to 350.
  2. Line a rimmed baking sheet with parchment paper.
  3. In a medium bowl mix together all ingredients, except coconut.
  4. Add coconut and stir until completely coated.
  5. Remove pepper and discard.
  6. Bake 12 to 14 minutes.
  7. Eat warm or cooled.
  8. Store cooled bacon bits in a covered container for four days or freeze for future use.

As I have said over and over, I love smoothies. I rely on them to fill in nutritional gaps in our hectic day-to-day lives, as well as to provide a delicious treat when we need one. My blender gets a regular workout in my kitchen.

Right now, I feel like a kid with a brand-new toy! Why? Because The Blender Girl, the very same Tess Masters from the gorgeous The Blender Girl Cookbook, has put together an app, The Blender Girl Smoothies, that takes smoothie making to the next level!

Photo by Erin Kunkel from The Blender Girl Smoothies app © Tess Masters, copyright (c) 2014. Published by Ten Speed Press, an imprint of Random House LLC.

This app is not only loaded with recipes -- 75 to start and then another recipe added every week until 100 recipes -- but Tess provides a wealth of information about the ingredients she uses.

It is so incredibly user-friendly, too! You can sort by dietary restriction (definitely appreciated in a food-allergy household!), you can put together a pre-populated shopping list, and you can learn about buying and storing ingredients along with a host of other info in the glossary.

More important to me, though -- The Blender Girl Smoothies app is super fun to use. It is loaded with absolutely beautiful photos of every smoothie, and it has a fun feature where you can enter how you're feeling and it will provide you with just the right smoothie for you at that moment! Tess also suggests 3 boosters (for flavor or nutrition or both) to go with each recipe to increase the variety.

Lucky for us, I got to preview this app, and Tess is sharing a DELICIOUS smoothie recipe with us. This Rosemary Melonade will whet your appetite to get this app right away!

rosemary melonade

This exotic blend sips like a fancy cocktail, but skips the hefty bar tab. Melon is hydrating, and rich in vitamin C and anti-inflammatory lycopenes, while rosemary contributes awesome flavor and antibacterial backup. The combination makes this your secret immunity agent! Throw in the jalapeño for an added cleanse and kick.

Serves 2

3 cups (480g) chopped seedless watermelon, chilled
1 teaspoon finely grated lemon zest
1 lemon, peeled and seeded
1 1/2 teaspoons finely chopped rosemary
1/2 cup (80g) frozen pineapple
1/4 cup (80g) frozen strawberries
5 drops alcohol-free liquid stevia, plus more to taste (optional)

Throw all of the ingredients into your blender and blast on high for 30 to 60 seconds, until well combined.

Boosters
1/2 cup (60g) frozen raw cauliflower florets
1/2 teaspoon cold-pressed, extra-virgin olive oil
1/4 teaspoon finely chopped jalapeño chile

Hempseed and Apple Oatmeal Breakfast Cookies #vegan #glutenfree #foodallergy friendly

I have a day job outside of writing recipes. (That explains why my posts are so infrequent!)

I write grants for a program that provides housing and services to homeless women and children and families who are impacted by domestic violence. These past couple of weeks, my day job has been very busy!

I have been running to meetings, staying up late writing, and scrambling to keep up with my mama duties all while getting ready for the launch of my new book. Ugh!

It's been tempting to turn to junk food to keep myself going -- and believe me, there has been too much indulgence going on! -- but I know that what I really need is good fuel. Good fuel that I can take with me when I'm rushing around trying not to drop any of the balls I'm juggling.

This recipe is a tidy solution to my need to eat healthy while on the run. I cooked up a pot of oatmeal, but instead of eating it right away, I baked into a little package. I'm not sure cookie is the right word, but I'm not sure what to call it. These little oatmeal snacks are crunchy on the outside, soft and oatmeal-y on the inside and  they really satisfy. With applesauce for sweetness, whole-grain oats for staying power, and shelled hemp seeds for protein, they have saved the day more than once this week.

Bake up a batch and then pop them in the refrigerator or freezer. When you need a wholesome breakfast or snack, heat a couple of them up in the oven or toaster.

Did you ever get a treat in the mail that was even better than you had hoped? That is exactly how I feel about my copy of The Blender Girl Cookbook by Tess Masters. Not only does it contain 100 easy, healthy gluten-free and vegan recipes, but it is chock full of tips, information, advice and Tess' warm personality.

This book delivers on its promise for "super-easy" and "super-healthy" recipes. I had friends over yesterday at the last minute to celebrate a friend's new baby (the beautiful Eden). I needed a company-worthy dish that came together quickly and that wouldn't burn the baby if we dropped some on her head! I whipped up the watermelon gazpacho from The Blender Girl Cookbook, and it was delightful. It was fresh and summery and made the lunch feel like a party.

Each of the recipes is gluten-free and vegan (so egg, dairy and animal-free), but nuts and soy are present in a fair number of the recipes. I think the book is still worthwhile, even with those allergies, though, because there is so much information that will be helpful to anyone interested in healthy eating, and there are many recipes that will work regardless of restriction.

Did I mention that this book is GORGEOUS?
My soup turned out beautiful, but I could not come close to capturing is prettiness like the picture in the book does, so I'm going to show you that one (with permission, of course)!

This recipe for Watermelon Gazpacho is provided courtesy of Tess Masters and The Blender Girl Cookbook.

watermelon gazpacho is the bomb!

The name says it all. Gazpacho rocks, and this concoction delivers a surprising taste

explosion with every spoonful. A happy blend of sweet and spicy, the flavors in this

chilled first course or main mellow nicely with time. In fact, the change in flavor

is quite pronounced. This is particularly true of the onion. Like a fabulous sangria

(see page 174), this soup is better the next day. But, it’s delicious a few hours after

preparing, so don’t feel like you have to wait beyond the three-hour chill.

  • serves 8 as a starter, 6 as a main
  • 4 cups (640g) roughly chopped seedless watermelon, plus 6 cups (960g) diced
  • 2 cups (300g) diced tomato
  • 1 cup (145g) peeled, seeded, and diced cucumber
  • 1/2 cup (70g) diced red bell pepper
  • 2 tablespoons diced red onion, plus more to taste
  • 3 tablespoons finely chopped basil
  • 3 tablespoons finely chopped mint
  • 3 tablespoons freshly squeezed lime juice, plus more to taste
  • 1 teaspoon finely grated lime zest
  • 2 teaspoons minced ginger
  • 1/2 teaspoon minced green serrano chile, plus more to taste
  • 1/2 tablespoon natural salt, plus more to taste
  • Pinch of freshly ground black pepper

Put the 4 cups of chopped watermelon into your blender and puree on high for 30 to 60 seconds, until liquefied. Pour into a serving bowl.

Add the 6 cups of diced watermelon and all the remaining ingredients. Stir to combine well. Tweak flavors to taste (you may want more onion, lime juice, chile, or salt).

Cover and chill in the fridge for at least 3 hours, but preferably 12 to 24 hours to allow the flavors to fuse and the vibrant red color to develop. Before serving, tweak flavors again (if it’s too spicy, add some lime juice). Pass additional lime juice and salt at the table.

Some of my other favorites from this book are:
  • Ginger Apple Pear Butter
  • If You're Chilly Grab Some Chili
  •  Cheerful Chimichurri Bowl
  • Pineapple Vanilla Sangria
