Chocolate Sunflower Seed Butter Smoothie

Makes 2 servings

This smoothie is chocolatey enough for dessert, but with banana and sunflower seed butter, it makes a great snack, too.  When bananas are getting very ripe, I peel them and put them in a freezer bag until I need them for smoothies.  Sunflower seed butter is available commercially, or there is a recipe to make it in the book.

1 1/2 frozen bananas
1/3 cup sunflower seed butter
1/3 cup apple juice
2 cups rice milk
4 teaspoons cocoa
1 teaspoon granulated sugar

In a small bowl, mix together cocoa and sugar.
• Slowly add boiling water, one tablespoon at a time to make a thin paste.
• Combine banana, sunflower seed butter, apple juice, rice milk and chocolate paste in blender.
•Blend until smooth.  Add more rice milk for a thinner smoothie.
