I was searching for some fabulous quote to put on our "Thanksgiving Post" this year... and I came across this and it really spoke to me today.   Thanksgiving is one very big day of the year to celebrate all that you are grateful in life.  I really love the spirit of Thanksgiving & how simpy pausing to be thankful for our blessings is an entire national holiday!  

Also- I also just realized that Kim and I have been blogging for 1 year now!  It has been an exciting adventure that has shown us tons about the world that we live in.  We are so thankful for each one of you who read our blog and encourage us to continue along this exciting path.  We have met some amazing people and have been given incredible opportunities by just putting a little of ourselves out there in the world on this little blog that we love.  It has turned this routine of our life and some simple opportunities into big blessings in our life and provided us with much joy (hence the quote ;)!



So here is a very simple little recipe to use up your pumpkin left from making pies or other holiday goodies...and gives your kids a yummy, simple, and nutritious snack!






Pumpkin Applesauce:

Ingredients:
1/4 cup canned pumpkin
1/2 cup fresh applesauce
Cinnamon

Directions:
Mix together pumpkin and applesauce.
Sprinkle with cinnamon!
Get out of the way ;)
